The first year's harvest of olives. Just one tree, 8 years old. I grew the darling from a seed and now she's giving back.
This photo is several weeks old, from when the first harvest was brined in a saturated solution. The second and final harvest was 3 or 4 weeks ago. I tasted a couple of olives today and I have to admit they were probably better for extracting oil. Its time to put them in fresh water now, or a less salty solution. It was a surprise, though, to find even though ALL of the olives were black when picked, most turned green within one week.
LATER POST: Further to the last, I have wonderful news! Those olives are delicious! It was too early to call what they really tasted like before.
